Ok, as far as I know you can only record your own material, right ?

I'm asking because I received a Contract proposal from a London Company

I'm not willing to take it at the time, specially because I had a "word" agreement with Clayton and I'm willing to join his label...

but I'd like to know if that's all correct, and etc etc...

correct. you can only record songs that you or your band has written and added to the band songlist
